

Orange Tartlets;
INGREDIENTS:
1 tbsp Finely Grated Orange Zest
2 tsp Finely Grated Lemon Zest
3/4 cup Fresh-Squeezed Orange Juice
1/4 cup Fresh-Squeezed Lemon Juice
1 1/3 cup Sugar
4 Eggs
Pinch of Salt
1 3/4 Sticks Unsalted Butter, Diced
EQUIPMENT:
Medium Sized Saucepan
Whisk
Sieve
DIRECTIONS:
In a medium-sized saucepan, whisk, together the zest, juice, sugar, eggs and salt. Put the pan over low heat and add the butter. Whisk the curd continuously until the curd is thick enough to hold the marks of a whisk.
Pass the curd through a sieve and pour it into the tartlet shells. Chill the tartlets until curd has set.
